If you were pining for a jar of Chicks With Knives' bacon jam, let's hope you arrived early at Artisanal LA. Even at $12 for a 6-oz. jar, the Chicks had sold out of the sweet, pungent spread by Sunday afternoon.
Where Villebois' pork rillette is a mellow, purely savory concoction that you could spread across a whole bagel, the Chicks' bacon jam is stronger and sweeter: powered as much by caramelized onions as it is by bacon. It's perfect for dipping crackers into or spreading lightly on a sandwich in lieu of mayonnaise. It would also make an excellent accompaniment to a cheese or charcuterie platter.
Yes, it can be eaten straight from the jar (there's no shame in that game), but the way this stuff is selling, you might want to pace yourself.
